The sheepsfoot blade was designed in ancient times for abusive work. The blunted end is not as suseptable to damage and dulling, while the overall shape lends itself to chopping and slicing. This is what makes the sheepsfoot blade so great in the kitchen. While its not as accurate for piercing, the blade is perfect for chopping. The long, straight edge makes great forward slicing motions and the tall blade allows for deep cuts while still maintaining directional control. My knives have character as a result of my beliefs on the creation of functional art. I beleive that form follows function, and form also follows process. When you look at an Avery Knifeworks blade, I want you to see the story of its creation. Each Kitchen blade has a signature "Nasty Grind". The flat groud bevels are finished to a scary sharp convex edge, making this ultra-thin blade durable. The upper portion of the blade is cleaned with a surface conditioning belt just enough to show the oxidation left from the forge. Every attribute is designed to point out the balance of function and aritistry in these hard working tools.
